Tagliatelle alla Bolognese Ingredients

For the Bolognese Sauce:

  • 2 tablespoons olive oil

  • 1 tablespoon unsalted butter

  • 1 onion, finely chopped

  • 1 carrot, finely chopped

  • 1 celery stalk, finely chopped

  • 2 garlic cloves, minced

  • 400g ground beef (or a mix of beef and pork)

  • 150ml dry red wine

  • 400g canned tomatoes (preferably San Marzano)

  • 2 tablespoons tomato paste

  • Salt and pepper to taste

  • A pinch of nutmeg (optional)

  • Fresh basil or oregano (for garnish)

For the Tagliatelle:

  • 300g fresh tagliatelle (store-bought or homemade)

  • Salt (for the pasta water)

Instructions

Step 1: Prepare the Bolognese Sauce

  1. Sauté the Vegetables: In a large saucepan, heat the olive oil and butter over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent. Stir in the minced garlic and cook for another minute.

  2. Brown the Meat: Increase the heat to medium-high and add the ground meat to the saucepan. Use a wooden spoon to break it up, stirring until it is browned all over. This should take about 8-10 minutes.

  3. Deglaze with Wine: Pour in the red wine, scraping the bottom of the pan to release any flavorful bits stuck to it. Let the wine simmer until it has reduced by half.

  4. Add Tomatoes and Seasoning: Stir in the canned tomatoes and tomato paste. Season with salt, pepper, and a pinch of nutmeg if desired. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let it cook for at least 1 hour, stirring occasionally. For a richer flavour, you can let it simmer for up to 2 hours.

Don’t have time to make your own pasta from scratch? No problem! We also sell premium dried pasta in our deli, so you can enjoy this delicious dish with ease.

Step 2: Cook the Tagliatelle

  1. Boil the Water: In a large pot, bring salted water to a boil.

  2. Cook the Pasta: Add the fresh tagliatelle to the boiling water. Cook for about 2-4 minutes or until the pasta is al dente. Fresh pasta cooks quickly, so keep an eye on it!

  3. Drain the Pasta: Once cooked, reserve a cup of pasta water and drain the tagliatelle.

Step 3: Combine and Serve

  1. Mix Pasta and Sauce: Add the drained tagliatelle directly to the saucepan with the Bolognese sauce. Toss gently to combine, adding a splash of reserved pasta water if needed to help the sauce adhere to the pasta.

  2. Plate the Dish: Serve the tagliatelle alla Bolognese hot, garnished with fresh basil or oregano. For an extra touch, sprinkle some grated Parmesan cheese on top.
